2016 Rose of Pinot Noir
This Rosé begins with notes of ripe watermelon and cranberry and the aromatics are complimented by floral hints of rose petal and violets. Although this wine is a dry rosé, there is a fresh, sweet note accompanied by flavors of maraschino cherry, raspberry and white peach. The finish is medium length supported by bright fruit flavors.
Manually harvested. Picked at optimum ripeness and hand sorted into half ton bins. The fruit was destemmed and crushed into a stainless steel fermentation tank. After cold soaking for 24 hours at 55 degrees Fahrenheit, the pink juice was drained into a separate fermentation tank. This process is called Saignee (French for bleeding). The wine was then inoculated with a selected yeast fermented cold to preserve the fresh, floral aromatics and delicate flavors.
Alluvial river deposits. Well drained sandy soils with underlying grave deposits.
